光明節是一個猶太教節日。該節日乃紀念猶太人在馬加比家族的領導下,從敘利亞塞琉古王朝國王安條克四世手上奪回耶路撒冷,並重新將耶路撒冷第二聖殿獻給上帝。為了表達對於出現“奇蹟”的喜悅,光明節的第一天晚餐通常是正式而盛大的,常有親朋應邀參加。晚餐前,先點上燭台,互相祝賀。傳統必食用的特定食品是油炸馬鈴薯絲餅。
紅薯/馬鈴薯絲餅(焗/煎)Sweet Potato Latkes
Latkes are potato pancakes that are perhaps best known as traditional Hanukkah food. Made with potatoes, onion and matzah or breadcrumbs, these crispy treats symbolize the miracle of Hanukkah because they are fried in oil. 


材料: 

紅薯 Sweet potatoes 964g

洋蔥 Medium onion, finely chopped 1 

雞蛋 Eggs, beaten 2 

中筋麵粉 All purpose flour 1/4 cup 

泡打粉 Baking powder 1/4 tsp 

鹽 Salt 1/2 tsp 

肉桂粉 Ground cinnamon 1/2 tsp 

肉荳蔻 Ground nutmeg 1/4 tsp (optional) 

現磨黑胡椒 Ground black pepper 1/4 tsp 

伴料(topping): 

希臘式優格或酸奶油 Greek-style yogurt OR sour cream as topping for each serving 

蔥花 Green onion (optional) 

做法: 

馬鈴薯洗淨去皮擦成絲。洋蔥切粒。


在一個大碗裡加入所有材料攪拌均勻。 




煎/焗好後,把希臘式優格或酸奶油放上就成啦!! 



煎做法: 

平底鍋裡放油,取適量厚薄一致馬鈴薯絲糊約 1tbsp,放鍋裡壓平慢火煎 2分鐘(不能太厚,否則難熟喔! ) 



一面煎至成形微黃後,翻面繼續將另一面煎熟即可。

Directions to frying pan:

Heat 2 teaspoons of oil in a frying pan over medium-high heat. Add 8 heaped tablespoonfuls of sweet potato mixture to the pan. Press down with a spatula. Cook for 2 minutes each side or until golden. Repeat with remaining oil and sweet potato mixture. Add Greek yogurt or sour cream as a topping or for dipping.

焗做法: 

烤箱預熱到400F (205C) 

噴上烹飪噴霧在兩個大焗盤或烘焙紙上。 



取適量厚薄一致馬鈴薯絲糊約 1tbsp,放上焗盤裡壓平(不能太厚,否則難熟喔! ) 

焗 25分鐘,再翻面繼續焗 10分鐘即可。 

Directions to bake:

Preheat the oven to 400F. 
Coat two baking sheets with cooking spray.
In a large bowl combine all ingredients. Drop by quarter-cupfuls onto the baking sheets. Flatten with a spatula.
Bake for 25 minutes. Flip and bake for an additional 10 minutes.
Add Greek yogurt or sour cream as a topping or for dipping.

Kitchens Tips:

變綠生芽的馬鈴薯不能吃。購買馬鈴薯時,勿選發芽馬鈴薯和發綠馬鈴薯。馬鈴薯發芽或變綠後,芽孔周圍就會含有大量的有毒龍葵素,這是一種神經毒素,可抑制呼吸中樞。
